How to make Bluey-Berry pancakes

Berry Good – Celebrate Pancake Day, Heeler-style, with these Bluey-berry pancakes!
Flippin’ delicious and bursting with Heeler happiness! These Bluey-berry pancakes are naturally blue, loaded with juicy blueberries, and stacked with peanut butter for the ultimate breakfast adventure. Makes six stacks of about five mini pancakes.
You will need:
Note: Make sure a grown up helps with small pieces, preparation and baking.
- 1 cup self-raising flour
- 1 tbsp sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tbsp blue spirulina or butterfly pea powder
- 1 ¼ cup milk
- 1 egg
- 1 tsp vanilla extract
- 2 tbsp melted butter
- 3/4 cup fresh blueberries
- 1 tbsp smooth peanut butter (or any nut butter)
- 6 marshmallows
- ¼ cup chocolate chips
- Maple syrup and fresh blueberries to serve
Method:
Step One: Make the pancakes
- Grab a big bowl and whisk together all the dry ingredients – no need to be fancy, just give it a good mix.
- Pour in the milk, egg, vanilla, and melted butter. Whisk until just combined and – wow, would you look at that? – your batter turns Bluey blue!
- Toss in the blueberries and give it a few more gentle stirs. Do not overmix, or your pancakes might end up as chewy as Bandit’s old thongs!
- Heat a nonstick pan over medium heat. Melt a little butter, then wipe the pan with a paper towel to spread it evenly.
- Scoop small teaspoons of batter into the pan, keeping them as similar in size as you can.
- Watch for bubbles on top and the edges to look a little less glossy – that’s your cue to flip! Cook for another 30 seconds to a minute, until fluffy and cooked through.


Step Two: Make the decorations
- Take two or three of the least-good-looking pancakes and cut out 12 small triangles with kitchen scissors – these will be Bluey’s ears.
- Carefully snip four marshmallows into rounds to create Bluey’s eyes.
- Scoop a tablespoon of peanut butter into a small zip lock bag, snip a tiny corner, and – ta-da! – you’ve got a DIY piping bag.
- Do the same with the chocolate chips, melting them in a zip lock bag in 30-second bursts until smooth. Snip off the tip and pipe little ovals onto the marshmallows to make Bluey’s pupils. Set aside.


Step Three: Assemble your Bluey-berry pancakes
- Stack five pancakes on top of each other – this will be Bluey’s face.
- Pipe a big circle of peanut butter on the lower half of the stack, covering about four pancakes – this is Bluey’s snout!
- Add two small dots of peanut butter just above the snout, then stick on the marshmallow eyes. Gently press the bottom of each eye slightly into the snout so the peanut butter overlaps a little – this helps them blend in, just like Bluey’s! Pipe a little triangle of peanut butter on the snout for Bluey’s nose.
- Pipe two short peanut butter lines at the very top of the stack and press on the pancake triangles to make Bluey’s ears.
- Drizzle with maple syrup, pile on the blueberries, and take a big bite before Bluey runs off!
